The recipe for lecho salad came to us from abroad. Nevertheless, he just gained extraordinary popularity. Almost every housewife should have several jars of this fragrant and tasty salad on the preserved shelf. It is noteworthy that the composition of the workpiece can be changed depending on your own preferences. Only tomatoes and bell peppers remain unchanged components in lecho. In addition to the main ingredients, you can add carrots, eggplants, cucumbers and zucchini to the salad. The classic Hungarian version also includes meat or sausage. The first option of cucumber lecho for the winter
For this spicy and tasty salad, we need:
- young small cucumbers - one kilogram;
- bell peppers - five pieces (large size);
- fleshy ripe tomatoes - half a kilogram;
- hot pepper - one piece;
- garlic - 5 to 8 teeth;
- onions - two pieces (large);
- carrots - 1 piece;
- sunflower oil;
- Dill seeds;
- coriander seeds;
- Bay leaf;
- salt to taste.
Put a deep frying pan on a small fire, pour in refined sunflower oil and fry chopped onions and grated carrots on it. The vegetables should be soft, but not brown.
Attention! There should be a lot of oil.
Tomatoes are washed under running water. Then the stalks are removed from them and, if desired, the skin can be removed. I wash the bell pepper too, cut it, cut out the stalks and remove the seeds. After that, grind the tomatoes and peppers with a blender or meat grinder. The resulting mass must be slightly salt, add prepared spices to taste and set on low heat. Let the mixture boil, after which we throw the cucumbers into it, which were previously peeled and cut in the form of circles. Lecho is cooked for at least three minutes, and then toasted carrots and onions are added.
Next, we proceed to the preparation of cans for lecho. They must be thoroughly washed and sterilized. Then peeled garlic is placed on the bottom of each container, after which the lecho itself is poured. We put lids on top of the jars and put the containers in a large pot of water. We put it on a slow fire, wait for the water to boil, and detect it for exactly 20 minutes. After this time, it will be possible to roll up cans of lecho.
Turn each container with the lid down. Then the jars need to be wrapped in a blanket or blanket. We leave our blanks for a day so that they cool completely. Further, the workpieces are stored in a dark, cool place.
Attention! Instead of cucumbers, you can also use zucchini. Or take half a serving of cucumbers and half a courgette.
Instead of fresh tomatoes, tomato paste is great. Before cooking, it should be diluted with water to make a mass similar to liquid sour cream. It is important to look at the composition of the paste. It should not contain preservatives. The paste itself has excellent preservative properties.
Cucumber lecho with tomatoes
For the second version of the lecho for the winter, we need to prepare:
- small cucumbers - up to 2.5 kilograms;
- ripe fleshy tomatoes - up to 1.5 kilograms;
- garlic - 5 to 10 teeth;
- sweet bell pepper - half a kilogram;
- 9% table vinegar - one spoon;
- refined sunflower oil - 50 ml;
- red hot pepper to taste;
- granulated sugar - about 100 grams;
- dill and coriander seeds;
- salt - 2 (with a slide) tablespoons.
Peel and chop the tomatoes and peppers, as in the first recipe. Then the vegetables are minced using a meat grinder or other kitchen equipment. Now this liquid mass is placed on the stove and brought to a boil. After that, you can add all the spices to the mixture. Further, peeled and chopped cucumbers are added to the dish. The salad is boiled for another 10 minutes, after which sunflower oil and table vinegar are poured into it. As soon as the dish boils again, the fire is turned off.
Put peeled and chopped onions and garlic in clean sterilized jars. Immediately after them, the vegetable mass is poured into jars. Now each jar is rolled up with sterilized lids, and left to cool upside down. After the salad is completely cooled, you need to move the piece to a cool place.
What skillful housewives do not cook from cucumbers. But few can make lecho from this vegetable.
